Cowboy Caviar Pasta Salad

For all my pasta lovers, this recipe can be a great start to exploring something different while still bringing a comfort food-like feel! The ingredients I am using for my version of Cowboy Caviar may already be in your kitchen or what you use regularly, so don’t feel too intimidated by its name!

Ingredients
  

  • 1 cup Ditalini pasta uncooked
  • 1 cup corn
  • 1 cup black eyed peas
  • 1 cup black beans
  • 1 cup red bell peppers diced
  • 1 cup green bell peppers diced
  • 1 cup seed tomatoes diced
  • 1 cup red onion diced
  • 1/4 cup fresh parsley chopped
  • 2 garlic cloves chopped
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 8 oz cilantro lime dressing Primal Kitchen Foods brand

Instructions
 

  • First boil water for pasta
  • In a separate large bowl, add your corn, black eyed peas, black beans, as well as your diced red peppers, green peppers, seed tomatoes, and red onions.
  • Add in your chopped fresh parsley, garlic cloves, salt, black pepper!
  • When your pasta is finally cooked, go ahead and add that as well.
  • Drizzle in your cilantro lime dressing (I personally like to use the brand Primal Kitchen Food) and mix everything together!

Notes

I prefer using Ditalini for this recipe mainly due to size as it mixes effortlessly into the food and doesn’t take away from the rest of the ingredients. This is just an addition to Cowboy Caviar, but of course, feel free to add your own preference or style to this!
