I love the extra flavor that the sun-dried tomatoes add to this sauce and it pairs perfectly with salmon! In this recipe, I’ll be using Rao’s sun-dried tomato pesto. It’s the best for an extra creamy and wholesome dish!

  • Cook salmon on medium-high heat skin-side first to get a beautiful sear for 3-4 minutes.
  • Flip and cook for an additional 3-4 minutes.
  • Use a food thermometer to test if your salmon is finished cooking. The recommended temperature for a done salmon is 145F.

Ingredients

  • 1 tbsp olive oil
  • 4 salmon pieces
  • salt and pepper
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • 4 oz sun dried tomato pesto ( I used Rao’s)
  • 1 cup broth
  • handful of spinach

How to Make Salmon in Sun Dried Tomato Pesto

1. Season the salmon with salt and pepper.

2. Heat the olive oil in a large skillet and add the salmon. Cook the salmon on each side for about 3-4 minutes on medium/high heat. When done, take the salmon out and set aside.

3. Using the same skillet, add in the garlic, the cream and a pinch of salt. Simmer for about 10 minutes. 

4. Add in the pesto, broth, and spinach and simmer another 10 minutes.

5. Add the salmon pieces back in and heat trough.

Enjoy with some pasta, mashed potatoes or rice!
