A Versatile, Low-Carb Zucchini Recipe

Here’s a recipe you can make as your main meal or serve it as a side dish with some protein!

Zucchini boats are one of those versatile food creations you can do just about anything with. You create your own perfect sauce mixture with any type of vegetables and seasonings. I personally love adding mushrooms, bell peppers, white and green onions, and Italian seasoning to create a simple and healthy veggie stuffed zucchini boat recipe. You can also add some ground meat to help add more protein to your diet. If this is something you’re making for a small group of family and friends, you can even create individually unique stuffed zucchini boats for everyone to enjoy. It really is one of those dishes that favor creativity, and it’s super easy to make.

Ingredients:

  • 2 tbsp olive oil
  • 3 oz onions, chopped
  • 2 garlic cloves, minced
  • 4 oz green bell peppers, diced
  • 6 oz mushrooms, chopped
  • 5 basil leaves, chopped
  • 1 tsp salt
  • 1 tsp Italian seasoning
  • 1 cup marinara sauce (I use Rao’s)
  • 4 medium zucchinis
  • 2 oz shredded mozzarella cheese

How to Make Healthy Veggie Zucchini Boats

  1. Add the oil, onions, garlic, peppers, mushrooms and seasonings into a large skillet. Sautee on medium heat for about 5-6 minutes until the veggies become softer.

2. Add in the basil and marinara and simmer on low/medium heat for about 15 minutes. Covered.

3. Meanwhile, cut the ends of the zucchinis and then cut each one in half (the long way) and using a small spoon, scoop out the middle/seeds, making sure you don’t poke through the zucchini.

4. When the veggie sauce is finished, fill each zucchini boat until you use up everything.

5. Sprinkle each one with the mozzarella.

6. Layer on a baking sheet and bake at 350F for 30 minutes. Once baked, serve on plates and enjoy!
