A Healthy and Creamy Vegetable Soup For Everyone

Here’s a soup you can easily hide a veggie in or two if you’ve got picky eaters. Most kids won’t eat cauliflower, but mix it into this Potato Cauliflower Soup and they’ll never know. My kids aren’t too picky when it comes to food, but even then, they had no idea this soup was packed with extra veggies other than potatoes. 

Potato soups are amazing when you’re looking for a creamy, comforting bowl of deliciousness. By blending the cooked vegetables and broth, you get a nice creamy soup without having to add heavy creams and/or flours. It’s a great start to making healthier meals that anyone can be pleased with!

This soup can also be made in a variety of ways, depending on your preference. Most potato soups are served with ingredients like bacon, cheese, or herbs. If that’s something you enjoy, simply cook it in the soup or add it as a topping.

If you’d like to create a vegan version of this Potato Cauliflower Soup recipe, substitute the half and half with unsweetened coconut milk or your preferred plant based creamer. To make it vegetarian, just follow the recipe as is!

Ingredients

  • 2 tbsp olive oil
  • 3 oz onions, chopped
  • 2 lbs peeled potatoes, diced
  • 13 oz cauliflower florets
  • 2 tsp salt
  • 1/4 tsp black pepper
  • 4 cups vegetable broth
  • 1 cup half and half

How to Make The Best Potato Cauliflower Soup

  1. In a larger pot, heat the oil on medium heat.
  2. Add the onions, potatoes, cauliflower, salt and pepper. Sautee for about 10 minutes on medium heat. Mix often. The veggies will soften and you will get some brown bits for extra flavor.

3. Add broth and bring to a simmer. Cover and cook about 20 minutes.

4. Uncover and blend the soup with a handheld blender (or transfer to a regular blender).

5. Add in the half and half and heat through. 

6. Add more salt if needed. Serve in bowl and enjoy!
