- 3 oz onions, chopped
- 2 lbs peeled potatoes, diced

- 2 tsp salt

- 4 cups vegetable broth

How to Make The Best Potato Cauliflower Soup
- In a larger pot, heat the oil on medium heat.
- Add the onions, potatoes, cauliflower, salt and pepper. Sautee for about 10 minutes on medium heat. Mix often. The veggies will soften and you will get some brown bits for extra flavor.

4. Uncover and blend the soup with a handheld blender (or transfer to a regular blender).
