A Delicious and Easy Pasta Alternative Without The Carbs
Here is a meal you can make with just four main ingredients in only 30 minutes! Not only is this spaghetti squash with bolognese sauce easy and simple to make, but it’s also a great low carb alternative to pasta. In fact, (although rare) spaghetti squash is my favorite way to enjoy a comforting dish without the heaviness of pasta.
What makes this dish feel like the real deal is definitely the flavor from bolognese sauce. If you haven’t had bolognese before, it’s an Italian meat-based sauce that’s just to die for. It is most commonly made with ground meat and a tomato base, a simple yet perfect mixture for your pasta (or squash!). While a real and authentic bolognese sauce does require more ingredients and take a little more time, this recipe calls for just three ingredients and takes very little effort to make, which is the whole point of this dish! Don’t worry, you’ll still get the authentic feel. While I did keep the sauce simple, it can definitely be dressed up with other seasonings and ingredients of your choice!
As for the spaghetti squash itself, this is also another part of this recipe that’s very easy to make. All the effort comes from simply cutting the squash in half (the long way) and scooping out the seeds. You’ll then just drizzle with some olive oil, set it all on a baking dish face down, and bake until softened! Ingredients
- 1 spaghetti squash
- 2 tbsp olive oil
- 12 oz ground meat ( I used plant based)
- 1 1/4 cup of marinara sauce of your choice
- salt and pepper if needed
- grated cheese for topping (optional)
- nutritional yeast for topping (optional and vegan option)
How to Make Spaghetti Squash with Bolognese Sauce
- Preheat the oven to 450F.
- Cut the spaghetti squash in half. Scoop out all of the insides. Drizzle with some oil and lay on a baking sheet, face down. Bake for 30 minutes. When finished and ready to use, scoop out the “spaghetti” with a fork.


3. Meanwhile, in a medium pot, heat the olive oil then add the meat. Cook the meat until completely browned.
4. Add in the marinara sauce and simmer about 10 minutes on low. Depending on the sauce you choose to use, you might or might not need to use salt to taste.

5. Scoop out the spaghetti squash and top with the meat sauce. Followed by some grated cheese or nutritional yeast. Enjoy!
