Here’s a filling and juicy tomato-based Gnocchi Pomodoro recipe for all of my gnocchi lovers! This is a super simple and easy gnocchi dish combined with homemade tomato pomodoro sauce and fresh herbs to create a delicious and flavorful Italian meal under 25 minutes.
What is Pomodoro?
Haven’t heard of pomodoro? It means “tomato” in Italian! The Italian way to say things always sounds more enticing, doesn’t it? A Tomato Gnocchi recipe wouldn’t sound as appetizing as a Gnocchi Pomodoro recipe in my opinion.
Because this recipe requires creating a tomato-based sauce, the best way to perfect this dish is using fresh tomatoes. Although most tomato sauces have similar ingredients, the difference between a pomodoro sauce and marinara sauce you’d find at the store is typically the texture and consistency. Fresh tomatoes will give you a chunkier, smoother sauce as a result of actually breaking down the tomatoes and water they carry. That’s why I’ve chosen to make a simple tomato sauce in this recipe rather than using one already-made.
All you really need to do to create this flavorful sauce is to combine the tomatoes with some garlic, basil and olive oil, and you’ll get a simple yet delicious sauce to go with anything! Try out this recipe and let the freshness of this dish fill your senses!
Recipe Tips
- For my tomatoes, I like to use cherub grape/cherry tomatoes. They always happen to be sweet and flavorful and they break down so well creating a wonderful pomodoro sauce.
- Always opt for fresh basil when possible. Nothing adds more flavor than freshly chopped herbs. Plus, you cant pass on the fresh tomato and basil combo, it’s perfection.
Ingredients
- 2 (16 oz) packs of gnocchi
- 2 tbsp olive oil
- 32 oz cherry tomatoes, halved
- 4 garlic cloves, minced
- 1/2 tsp salt
- 1/2 tsp oregano
- 8 large basil leaves, chopped
- 1/4 cup gnocchi cooking water
- grated parmesan for topping (optional)

How to Make the Best Gnocchi Pomodoro
1.) Cook the gnocchi in salted water and save 1/4 cup of the water.
2.) In a large skillet, heat the oil, then add the garlic, tomatoes, oregano, salt, and basil. Simmer on low for about 10 minutes. The tomatoes will break down and become a sauce.



3.) Add in the reserved water, the cooked gnocchi and more salt if needed. Mix well. Top with extra chopped basil and some parmesan.
