Why This Artichoke Pasta is so Delicious and so Simple!
Personally, I love artichoke. I find myself incorporating them into many of my pasta dishes and they’re absolutely great to use in other dishes such as pizza or salad.
Artichokes are described to have a nutty flavor to them, but if using marinated artichoke hearts in a jar, you’ll get more of the herb and citric flavors which can be great for adding more flavor to a dish! Since I’m pairing lemon and marinated artichoke hearts together, this is a perfect way to make a fresh and rich pasta for anyone to enjoy.
Also, not only are artichokes delicious on their own but they are low in fat, and high in fiber, folate and vitamins C and K! Not only will you be loving the food, but so will your body.

Recipe Tips
- I prefer using bowtie/farfalle pasta because they’re fun and add character to the dish. You can, of course, use any pasta of your choice.
- I prefer to use jarred marinated artichokes because they add that extra flavor of the herbs and oils compared to plain ones.
- To keep this pasta nice and silky, make sure to grate your garlic cloves. It’ll blend nicely into the sauce, keeping the flavor without having to bite into garlic chunks.
Ingredients
- 8 oz bowtie pasta
- 1 stick butter, unsalted
- 2 garlic cloves, grated
- juice of 1/2 lemon
- zest of 1 lemon
- 1 cup heavy cream
- 3 oz freshly grated Parmesan
- 1/2 cup pasta water
- 12 oz jar of marinated artichokes, drained (or 7 oz dry)
- handful of fresh parsley
- salt if needed

How to Make Creamy Lemon Artichoke Pasta
- Cook the pasta in salted water and save the water.
- In a large skillet, melt the butter then add the garlic and cook for a few minutes until fragrant.
- Add in the lemon juice, the heavy cream and the zest and bring to a simmer. Cook on low for about 10 minutes.
- Add in the cheese and whisk well until completely melted and creamy.
- Throw in the cooked pasta, the drained artichokes, pasta water and the parsley and mix well. Enjoy!
