Recipe Tips
- If you can find some in your local grocery store, it could be convenient to get already cooked lobster meat. If not, opt for lobster tails. They are super easy to cook.
- You can use any pasta shape of your choice.
- Always go for freshly grated cheese. You know its fresh and it’ll melt beautifully.
How to Properly Cook Lobster Tails
Never cooked lobster tails before but want to try this recipe? Here’s some easy guidelines to preparing and cooking a great lobster tail:
- First things first, I like to rinse everything to ensure cleanliness. So, rinse your lobster tails with cold water.
- If you have a steam pot, fill it with water and bring it to a boil. Add the lobster tails in and cover with the lid. Let them steam for about 7-8 minutes. (This is for 4 lobster tails)
- If you don’t have a steam pot, simply bring some water to a boil and add the lobster tails in and boil for 5-6 minutes.
- Lobster tails will be pink and meat will turn white when cooked.
- Steaming the lobster tails will also allow them to be a little more tender simply because they wont absorb so much of the water when boiling.
Ingredients
- 1 stick of butter, unsalted
- 2 garlic cloves, minced
- 1/2 tbsp cajun seasoning
- 1 tbsp all-purpose flour
- 3 cups half and half
- pinch of salt (if needed)
- 4 oz shredded Gouda cheese
- 4 oz shredded mild cheddar cheese
- meat from 4 lobster tails or about 8 oz ,chopped
- 8 oz large macaroni shells
- 1/4 cup pasta water

How to Make Lobster Mac and Cheese
- Cook the pasta in salted water according to package directions and save some of the water.
- Meanwhile, in a large skillet, melt the butter then add the garlic and cajun seasoning. Mix for a few minutes until fragrant.

3. Add in the flour and mix well.
4. Pour in the half and half and simmer on low for 10 minutes. Mixing often. Season with salt if needed.
5. Add in the cheeses and mix until it’s nicely melted and creamy.

6. Toss in the cooked pasta, the lobster meat and the reserved pasta water. Mix well.
