Lasagna Soup

Love lasagna but hate the process? Turn it into a soup! My Lasagna Soup recipe is an alternative form to a classic Lasagna taste that can still be enjoyable for everyone. It’s a great tool for beginners to get used to the Lasagna-making process, but still be able to show off some skill and uniqueness with this simple and delicious recipe!

Lasagna Soup: An Alternative Form With a Classic Taste

Fun fact, everyone in my family LOVES lasagna. For the longest time, I avoided trying to make it simply because it can be such a long and daunting process: cooking the meat/tomato sauce, making the cheese sauce, cooking the noodles, layering the lasagna, baking it, have I missed anything else? It’s a lot for a beginner but once I got the hang of it, it became just another yummy dish to make for dinner.

Lasagnas require quite a bit of patience but I feel like once you successfully make it at least one time, you can literally make anything. So, the idea of making lasagna, is it a “Yeah?” “Maybe?” or “Nope!” to you?

If you’re worried, here is an easier option you could try! It’s kind of like a deconstructed lasagna, just toss and cook. No need for layering and baking just yet, you’re getting the same flavors of an old fashioned lasagna dish with this Lasagna Soup recipe!

For reference, this is not lasagna mush, so although it can be a lazy way of making lasagna, it has a game-changing feel to it that everyone can enjoy as first-time Lasagna Soup eaters and makers!

Tips Before Starting Your Lasagna Soup

  • Use any ground meat of your choice.  I like to use plant based to keep it vegetarian. You can also use chopped mushrooms if you prefer not to use any sort of meat or meat substitute. 
  • You can use any pasta you’d like. Maybe next time you make an actual lasagna, save those broken pieces of lasagna noodles that didn’t get used. They will come in handy now! 
  • Cook the pasta/noodles separately and add them when the soup is done cooking. This way the noodles wont cook together and absorb majority of the liquid making it too thick.  

Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 12 oz ground meat
  • 1 can (28 oz) crushed tomatoes
  • 1 can (14.5 oz) diced tomatoes
  • 1/2 tbsp Italian seasoning
  • 1/2 tbsp oregano
  • 1/2 tbsp parsley
  • 1 tsp salt
  • 2 cups broth 
  • 1/2 cup heavy cream 
  • 2 oz spinach
  • 6-8 oz lasagna noodles, broken up and cooked
  • 3 oz shredded mozzarella cheese 
  • 5 oz ricotta cheese

Steps to Making Lasagna Soup

1.) Break up the lasagna noodles into smaller pieces and cook just until al dente. Drain and set aside. 

2.) In a small bowl, combine the mozzarella and ricotta. Set aside. 

3.) In a larger pot, heat the oil. Then add the onions, garlic and ground meat. Cook about 3-4 minutes or until the meat is browned.

4.) Add in the tomatoes, seasonings and broth. Bring to a boil then cover and simmer for about 30 minutes.

5.) Uncover, add in the heavy cream and spinach. Simmer another 5 minutes.

6.) Add in the cooked lasagna noodles.

7.) Serve into bowls and top with some cheese mixture.
