Creamy Spinach and Gnocchi Bake

Let this recipe be another one of your favorite Gnocchi dishes! My Creamy Spinach and Gnocchi Bake is an amazing holiday-inspired meal or side-dish with warm greens and Italian dumplings mixed in a creme fraiche. This recipe is super easy, quick, and great to serve for an intimate dinner party with family and friends!

What is Creme Fraiche?

Creme fraiche is a dairy product very similar to sour cream. The difference is that creme fraiche has a bit fattier, thicker and creamier consistency, while sour cream is tangier and lower in fat.

Creme fraiche does also taste more mellow than sour cream, which I prefer! It’s extra important for this recipe as it gives the sauce a nice creamier texture, and we definitely want that for a creamy spinach and gnocchi bake!

Of course, you can always substitute for sour cream in case you can’t find creme fraiche at your local store, however, I ask you to try out my version first if possible!

Recipe Notes

  • This recipe requires that you broil your bake. Be mindful that every oven is different. My broil time may differ from yours, so keep an eye on your dish because it can burn quickly when broiling!
  • Make sure to use an oven-safe skillet, or, if you don’t have one, transfer what’s on your skillet into an oven-safe dish when ready to bake!

Ingredients

  • 1 stick unsalted butter
  • 2 garlic cloves, minced 
  • 10 oz fresh spinach, roughly chopped
  • 1 tsp salt
  • 1 tbsp all purpose flour
  • 2 cups half and half 
  • 4 oz creme fraiche 
  • 2 packs (16 oz each) potato gnocchi ( I use Delallo)
  • 6 oz shredded mozzarella cheese

How to Make Creamy Spinach and Gnocchi Bake!

  1. Cook the gnocchi in boiling water for a few minutes, drain and set aside. 
  2. In a large skillet (preferably oven safe) melt the butter, then add the garlic and let cook a couple of minutes until nicely fragrant.

3. Add the spinach and cook another few minutes or until the spinach wilts.

4. Add the salt and flour. Mix well. 

5. Pour in the half and half and simmer on medium low heat for about 10 minutes. The sauce will become creamier.

6. Add in the cooked gnocchi and the creme fraiche and mix well.

7. Top with the mozzarella cheese.

8. Put the skillet in the oven ( if oven safe or transfer to an oven safe dish) and broil on low for about 8 minutes or until its nice and golden on top.
