Why this Mashed Potato Recipe is so Good
First of all, if you haven’t noticed yet, my all-time favorite type of potato dishes are mashed potatoes! There’s just something so comforting about simply grabbing a spoon and eating mash straight out of the pot, it’s almost like a dessert for savory cravers (pun intended!).
I also remember being a kid and playing with my mashed potatoes, pretending I was making mountains and volcanos on my plate. I mention this because I think simple childhood memories like that are what can make food so special for others, and I’m here to share that special feeling with you too!
Mashed potatoes, in reality, are meant to be a simple dish made with some milk and butter. BUT, who says you can’t add a little extra goodness and experiment with ingredients?
In my case, I got creative and decided to add heavy cream and cheese to make a mashed potato recipe for some extra deliciousness, and that did not fail me! Now, I want to share this amazing simple cheesy Mashed Potatoes recipe with you that could transform your way of making typical mash!
Tips to Know Before Starting This Cheesy Mashed Potatoes Recipe
- Opt for Yukon gold potatoes. These are heavy in starch, so you will get that beautiful creaminess, fluffiness, as well as that nice buttery consistency you want in a mashed potatoes dish.
- If adding garlic, grate your cloves rather than chopping. The garlic will release more flavor and will mix in better so you can avoid chunks in a smooth mashed potato.
- Cut your potatoes into smaller pieces so they cook faster.
- If using cheese, get a block and freshly grate it. Then, let it sit at room temperature for a bit so that when adding it to your mash, it can melt in easily and beautifully!
- DON’T skip on adding some of the starchy water to your potatoes. It softens the potatoes even more and makes them creamier!
Ingredients for the Best Cheesy Mashed Potatoes
- 3 lbs gold potatoes, peeled
- 1.5 tbsp salt
- 4 tbsp unsalted butter
- 1 cup heavy cream
- 2 garlic cloves, grated
- 3 oz freshly grated mild cheddar cheese
- 2 wedges of Laughing Cow cheese
- 1/4 cup saved starchy potato water
- chopped chives for topping (optional)

How to Make Cheesy Mashed Potatoes
- Peel the potatoes, add to large pot and fill with water just until the potatoes are covered. Add in the salt and bring to a bowl. Cook on medium-high heat for about 30 minutes or until potatoes are soft inside (poke with fork to test!).
- When potatoes are cooked, drain them. Make sure to save some of the starchy water.

3. Add in the butter, cream, garlic, cheese, starchy water. Then, mash and mix well!
