It’s Totally Tomato Tortellini Soup! A deliciously filling recipe that’s rich in Italian spices, vegetables, and creamy, cheesy goodness. The San Marzano tomatoes that make up this recipe create a flavorful bowl of soup with surprises of soft and stuffed tortellini, a perfect balance for dinnertime.
Two Dinners in One Bowl!
You’ve probably seen soup and pasta separate from each other, with the soup as an appetizer and the pasta as a main course, no? Well, why not pair the two together and create one simply amazing dish?
That’s why I’ve come to share my Tomato Tortellini Soup. Tomato soup on it’s own is a great meal, but I thought adding some heavy whipping cream to create a creamier consistency while adding a package of cheese tortellini soup would top it off perfectly.
I’m always so stuffed after eating this, but in the best and most content way possible. This is an especially great dinner for the kids when I want to add more veggies into their meals, I can disguise it with pasta soup! It’s also a great holiday or special occasion meal to serve to guests, so try it out! Make sure to keep reading below to see which yummy side dish I’m eating this soup with.

Ingredients
- 2 tbsp olive oil
- 1 medium onion, diced
- 2 medium carrots, diced
- 2 celery sticks, diced
- 4 garlic cloves, minced
- 1 tbsp Italian Spaghetti seasoning
- 1 tsp salt
- 1/2 tsp paprika
- 1/2 tsp oregano
- 1 tbsp tomato paste
- 28 oz canned San Marzano tomatoes, crushed
- 2 cups vegetable broth
- 1 cup water
- 2 tbsp pesto
- 1 cup heavy cream
- 3 oz spinach
- 9 oz cheese tortellini
- parmesan cheese rind (optional)

How to Make My Delicious Tortellini Tomato Soup Recipe
- In a larger pot, heat the oil. Then add the onions, carrots, celery, and garlic. Cook for about 5 minutes.
- Add in all of the seasonings, tomato paste, canned tomatoes, broth, water, pesto, and cheese rind (if using). Bring to a boil, then cover and simmer on low to medium heat for about 30 minutes.
- Uncover and add in the heavy cream, spinach, and tortellini. Cook for another 10 minutes.
