This Lemon Ricotta and Spinach Orzo is a super easy recipe that you can finish in just 20 minutes and feed a lot of hungry bellies, 8 to be precise. I love serving this as a main course or as a side dish for special occasions. It’s also a great idea to use this recipe for yourself as a way to meal prep since there are so many servings and won’t take up much of your time.

The main ingredients of this orzo recipe also blend so effortlessly together, the lemon and spinach makes things taste so fresh, while the ricotta is just a great cheese in itself to add to your pasta, making you feel fuller and more content!

Ingredients

  • 4 tbsp butter
  • 4 garlic cloves, minced
  • 1 box orzo
  • juice of 1/2 lemon
  • 30 oz vegetable broth
  • 1/2 tsp salt + more if needed
  • 1/4 tsp black pepper
  • 3/4 cup heavy cream
  • 2 oz spinach, chopped
  • 5 oz ricotta cheese

How to Make Lemon Ricotta and Spinach Orzo

  1. In a larger pot, melt the butter on medium heat. Then add the garlic and lemon juice and cook for a couple of minutes until nicely fragrant!
  2. Add in the orzo, salt, pepper, and broth. Bring to a boil, then simmer on low for about 10 minutes (or until the broth has absorbed and the orzo is cooked). Make sure to mix often so the orzo doesn’t stick to the bottom of the pot.
  3. Add in the heavy cream and simmer for another few minutes.
  4. Add in the spinach and ricotta, and mix well until the ricotta is completely melted. Add more salt if needed.
