Pan Seared White Wine Scallops

This dish incorporates simple yet flavorful ingredients like white wine, garlic, parsley, and broth to take your scallops to the next level!

Cooking Tips: Preparing and Searing Scallops

If happen to be new to eating and cooking seafood in general, scallops are a great start to that journey. They have a mildly sweet, buttery taste with a smell that isn’t nearly as fishy as other seafood. I know the smell of fish or shellfish can be off-putting to those not used to eating seafood regularly, so scallops are definitely the way to go! You’ll be tasting the seasoning more than the scallop itself, and they have a beautifully tender texture.

Now, for searing scallops, there’s a couple of things you should keep in mind before we begin.

Scallops are generally easy to cook, however, there’s a more specific way to do it and also get that amazing golden crust while searing. Here it is:
  • First and foremost, it’s important to use SEA scallops! The deal is that they’re larger, so you have a better range for searing, unlike smaller bay scallops
  • Brining your scallops. Let your scallops brine in a solution of salt and water for 10 minutes before cooking them. This helps to freshen the flavor of the scallop itself and season the inside of it too!
  • Before adding in your scallops, make sure to pat them dry please! If they’re not dry, the leftover water will steam the scallops instead of searing them.
  • Use a large, stainless skillet thats NOT non-stick. It’s important that scallops DO stick to the pan to create that crisp crust we’re looking for.
  • No touching! This goes for the scallops and yourself. Let each scallop have an individual spot within the skillet, and don’t move them around the pan yourself when cooking on each side! By not moving them, you’re allowing for that brown crust to form. Yay!

With these steps, you should attain a beautifully seared look on each one of your scallops. It may seem like a lot that goes into it, but I promise you it’s easy when you give it a try.

Now that we have a good understanding of how to perfect this dish, let’s get into the rest of the ingredients and how to make my Seared White Wine Scallops!

Ingredients

  • 16 oz. sea scallops
  • salt and pepper for seasoning
  • 3 tbsp olive oil
  • 2 tbsp butter
  • 2 garlic cloves, minced
  • 1/2 tbsp flour
  • 1/2 cup dry white wine
  • 1/2 cup broth
  • 1/2 tbsp dried parsley

Directions to Seared White Wine Scallops

  1. Pat dry the scallops and season with salt and pepper.
  2. Heat the oil in a skillet on high heat then add the scallops in a single layer. Sear the scallops on each side for about 3-4 minutes. They should be nice and golden!
  3. Remove the scallops from the skillet and set aside.
  4. In that same skillet, add the butter and garlic. Cook for a couple of minutes.
  5. Add in the flour and whisk.
  6. Pour in the wine and broth, simmering on low for about 10 minutes. Whisk often, the sauce will thicken.
  7. Mix in the parsley and ass back the scallops. Add more salt if needed.

Serve with your favorite carb side dish (I love to use rice, potatoes, or pasta) and enjoy!
