What’s Makes Mom’s Potato Salad So Special?

Just about everything that’s in it. Of course, who isn’t going to love the food they grew up eating? Even if you didn’t grow up with this potato salad, you’re definitely going to feel some comforting wholesome vibes from each bite!

I also find that my favorite part to this potato salad recipe is the onions in it. Even as a child, surprisingly, I’ve always liked raw onions, which is a definite plus for me. Thanks Mom! Let me tell you, it adds such a nice crisp flavor to the whole potato salad!

What Can I Serve with this Potato Salad?

My mom and I love serving this potato salad recipe with a really good fish, so I highly recommend adding that to your plate. If you haven’t checked my other recipes out already, I do in fact have a few fish recipes you can look at for some inspiration with this dish 😉

Feel free to use other proteins of your choice! This potato salad goes with just about anything, you really can’t go wrong with what you decide to choose.

Ingredients for Mom’s Potato Salad

  • 4 lbs Russet potatoes, unpeeled and rinsed
  • 1 medium onion, sliced
  • 1 red bell pepper, sliced
  • 1 cucumber, sliced
  • 1.5 tsp salt
  • 1/2 tsp black pepper
  • 2 tsp Vegeta or any vegetable seasoning
  • 3/4 cup vegetable oil
  • 3-4 tbsp vinegar (depending on your preference)

How to Make Mom’s Delicious Potato Salad

  1. Rinse the potatoes, then add them to a big pot and add water until potatoes are covered. Cook on medium-high heat for about 30 minutes. To check if they’re cooked inside, pierce with fork, it should easily slide in.
  2. When the potatoes are cooked through, drain and let them cool down. Then, peel the skin off.
  3. When the potatoes are all peeled, slice them up!
  4. Add the potatoes in a big bowl with the remainder of your ingredients and mix until well combined. Add more salt or vinegar if needed.
  5. Cover and let sit. It’s best served at room temperature, and don’t forget your favorite protein!
