Grab a pot and let’s get cooking! I love this recipe from my head to-ma-toes 😉 I’ve got a super easy and delicious One Pot Tomato & Kale Pasta recipe that’ll only take you 30 minutes, and most of the work is just prep time!
All the bright hues (that you’ll see as you scroll below this recipe) is what makes this a mouth-watering and exciting meal to make while you’re prepping. It’s even better that this pasta contains a superfood, kale, that’s packed with vitamins and minerals essential for your overall health. Since the kale is mostly blended in and only slightly visible, this might also be a pasta dish your kids could greatly enjoy too!
Here’s what you’ll need to complete this simple 4-serving, 30 minutes or less, pasta recipe:
-3 garlic cloves, minced
-2 oz chopped kale, stems removed
-8 oz pasta (large elbows)
-10 oz cherry tomatoes, halved
-6 basil leaves, chopped
-1 cup marinara sauce ( I use Raos)
-3 cups vegetable broth
-1/2 cup half & half
-1/3 cup Parmesan
Add all of your ingredients, EXCEPT the parmesan, into a large pot. Bring this to a simmer, then cover and cook for 30 minutes. Make sure to stir everything in the pot often so your pasta doesn’t stick to the bottom.
Once everything is cooked through, remove the pot from heat and add the parmesan. Mix until well combined, and you’re done!
