Greek Couscous Salad

Pearly couscous bites and greek delights! Here’s my Greek Couscous Salad recipe.

With only two steps and a bunch of wholesome ingredients, you’ll find yourself impatiently waiting to eat this salad as you mix all the vibrant colors together. 

This recipe will take you only 30 minutes, and serves 6-8, enough to save for later or share the deliciousness with family, friends, or whoever else is lucky enough to be served this salad!

Let’s get started on our in-greek-ients!

Ingredients

-8 oz Pearl Couscous

-6 oz diced cucumbers

-10 cherry tomatoes, halved

-1 can chickpeas, rinsed and drained

-10 oz jar mixed Greek olives

-4 oz diced red onions

-2 tbsp fresh chopped parsley

-8oz feta cheese

-3/4 cup Greek dressing

-1/4 cup olive oil

Directions

Here’s the easiest part, all you need to do is cook your couscous according to package directions, then let it cool off completely.

Once your couscous is all cooled off, simply combine all of the ingredients in a large bowl and mix well. 

There you have it! A super delicious Greek salad you can easily make at any time.

Serve cold or at room temperature with your preferred protein, and enjoy!

Ingredients
  

  • 8 oz Pearl couscous
  • 6 oz Diced cucumbers
