Kids Broccoli Cheese Macaroni

I’ve got a super simple, vibrant, and cheesy recipe that even the most picky taste-buds could enjoy, my Kids Broccoli Cheese Macaroni! You’ll only need a few ingredients, and if you have a food processor (optional), make sure to take that out for this recipe!

Macaroni for Picky Eaters

Cooking for kids can be a bit of a puzzle, you’re never going to know what to expect when it comes to their eating habits! The little ones can be super picky, especially when it comes to being served food that incorporates necessary nutrients, like vegetables, which is usually at the least of their concern. However, I’ve got a super simple, vibrant, and cheesy recipe that even the most picky taste-buds could enjoy! 

Let’s get cooking! All you’ll need is 40 minutes for this super easy meal.

Ingredients

  • 4 tbsp butter
  • 12 oz chopped raw broccoli (I use the food processor for this)
  • 1/2 tsp salt
  • 2 cups heavy cream
  • 6 oz freshly grated mild cheddar
  • 2 oz freshly grated parmesan
  • 8 oz large macaroni

Directions

You’ll first want to cook your large macaroni pasta according to the package’s directions.

Meanwhile, in a large pan on medium/low heat, melt your butter and add the chopped broccoli. As mentioned above, I use a food processor for this, however, you can still achieve the same result without one! Cook this for about 5 minutes.

After 5 minutes, add your salt and heavy cream. Simmer on low for about 15 min. The sauce will thicken, and then you’ll add in the parmesan and mild cheddar onto the pan. Whisk the cheeses well until it’s all nice and melted. 

Tip: If your sauce happens to be too thick, you can also save some extra pasta water to thin it out!

Finally, add in your cooked pasta, mix until well combined, and you’re done! You can also add more salt if needed, but nonetheless, the kiddos will be ready to eat! Of course, this recipe is not only exclusive to your children, this is still a delicious meal that anyone at any age can enjoy.
