Here I have for you my Toasted Gnocchi Caprese Salad! There’s a freshness to every bite from the seasonings, herbs, and tomatoes, and a comfort in the gnocchi and mozzarella pearls. Usually, you might associate gnocchi with soup or sauce, however, this recipe takes it to another level while still being super easy and quick to complete!
The Answer is Always Gnocchi
Remember my last gnocchi recipe? It was a deliciously creamy dinner that I highly urge you to go check out after you hear about this dish. Because the gnocchi was such a hit, I wanted to incorporate it again in another recipe to share with you the wonders of these little potato dumplings!
Let’s get started.

Ingredients
- 16 oz pack Gnocchi (I use Delallo)
- 4 tbsp olive oil
- 10 oz Cherry Tomatoes, halved
- 2 garlic cloves- minced or grated
- 0.5 oz fresh basil leaves, chopped
- 8 oz fresh mozzarella pearls
- 1 tsp Italian Seasoning
- 1/2 tsp salt
- Pinch of black pepper
Directions
First, heat two tablespoons of olive oil in a medium pan and then add the gnocchi. For reference, I personally use the Delallo brand for gnocchi. Cook this for about 15 min while tossing often until the gnocchi is nice and golden!
Remove the pan from heat and let it cool off completely. Please make sure not to skip this step as warm gnocchi will cause your cheese to melt, which we don’t want for our salad.
Once the gnocchi has completely cooled off, combine it in a larger bowl with the tomatoes, basil, garlic, mozzarella, seasonings, and the remaining olive oil. Mix everything until combined well.
And there you are! For some enhancement for your taste buds, you can let the salad sit for a bit before eating so that all of the flavors combine really well! You can also serve this dish with your favorite protein or eat it on its own. Regardless, the gnocchi is the star of the show here!
