Olive Garden’s Chicken & Gnocchi Soup – Copycat Recipe
Not only is cream of gnocchi wonderful on it’s own, but it’s even better when you can make an exact version of this delicious gnocchi soup from the restaurant that made it such a hit in the first place. I’m specifically talking about Olive Garden’s chicken & gnocchi soup. It’s a staple side dish to any pasta there and I don’t know another restaurant known for it’s gnocchi soup, maybe because Olive Garden’s is THAT good. If you still don’t know what Olive Garden is by now, it’s a Italian restaurant chain, and when I tell you this recipe is the copycat version of their creamy gnocchi soup, I mean it! It’s definitely something to consider if you’re not looking to go out or spend more than you need to at a restaurant, when you can make the exact recipe right at home.
Because I’m vegetarian myself, I’ve opted for no chicken to this cream of gnocchi soup, but of course, cook as you please! With or without chicken, you’re still getting that same creamy, filling, and delicious Olive Garden gnocchi soup. You definitely don’t want to miss out on this recipe, especially if you don’t have an Olive Garden restaurant near you!
Now, let’s get started on creating the copycat version of Olive Garden’s most popular dish, Cream of Gnocchi soup.
Ingredients for Gnocchi Soup
- 2 tbsp butter
- 1 medium onion, diced
- 2 medium carrots, diced
- 2 celery sticks, diced
- 1 tsp salt
- 1 tsp dried basil
- 1 tsp garlic powder
- 1/8 tsp ground pepper
- 3 tbsp all purpose flour
- 4 cups vegetable broth
- 1 pack (16 oz) potato gnocchi
- 2 cups half & half
- 3 oz fresh spinach, chopped
- 2 oz cream cheese

How to Make Cream Of Gnocchi
- In a large pot, melt the butter on medium heat. Then add your onions, carrots, and celery. Sautee for about 5 minutes.
- Add in the seasonings and all-purpose flour. Mix well.
- Pour the vegetable broth in the pot and bring everything to a boil. Then cover and simmer on low for about 30 minutes.
- After 30 minutes, uncover the pot and add in the gnocchi. Cook for 5 minutes.
- Add the half & half, chopped spinach, and cream cheese!
- Continue cooking for another 5 minutes until the cream cheese has melted completely.
- And voila, you’re ready to serve!
