Cajun Cavatappi

In this recipe I will be introducing a Cajun Cavatappi recipe that I am so excited to share with you. One of my favorite things about this dish is the mix of spices that create a beautiful aroma and color! 

What is Cavatappi?

Cavatappi, ever heard of that one before? Cavatappi, translated from Italian for “corkscrews” is a type of macaroni pasta in a small, spiral form. Fun fact, it’s also vegan! Although this recipe does call for dairy ingredients, you can definitely substitute for vegan items and still enjoy the lovely pasta that is cavatappi!

Ingredients

  • 2 tbsp butter
  • 4 garlic cloves- minced
  • 5oz diced onions
  • 8 oz of diced bell peppers (red, yellow, green)
  • 4 oz sliced mushrooms
  • 1 tbsp + 1/2 tsp cajun seasoning
  • 1/4 tsp crushed red pepper
  • 2 cups heavy cream
  • 1/4 cup pasta water
  • 1/2 cup parmesan
  • 8oz cavatappi pasta

Now let’s get cooking! 

Directions 

First begin by cooking the cavatappi pasta according to package directions. Also, make sure to save the water once the pasta is done as you’ll be using it for your sauce.

Meanwhile, heat up a large skillet and add your butter to melt. Once that’s melted, add your garlic, onions, peppers, mushrooms, crushed red pepper. You will also add only 1 tbsp of cajun seasoning for now, so make sure to leave the last ½ tsp for later.

Cook all of the veggies you’ve placed in the skillet on low/medium heat for about 10 minutes. Stir often!

After 10 minutes, place the cooked vegetables in a bowl and set aside.

Using the same skillet, you’re now going to add the heavy cream and the 1/2 tsp cajun seasoning you’ve saved, simmering together on low for another 10 minutes. While simmering, you should notice the thickening and become sauce-like texture. Make sure to stir often as well.

You will now add back your cooked veggies, while also adding in the cooked cavatappi, saved pasta water, and parmesan cheese. Mix everything together until all of the ingredients are well-combined.

After this, you are now ready to enjoy your Cajun Cavatappi! Serve in bowls and top with more crushed pepper if you like extra heat.

Notes

Top this dish with more crushed pepper if you like extra heat! I know I do!
