For all my pasta lovers, this Cowboy Caviar Pasta Salad can be a great start to exploring something different while still bringing a comfort food-like feel! The ingredients I am using for my version of Cowboy Caviar may already be in your kitchen or what you use regularly, so don’t feel too intimidated by its name!
Ingredients to Cowboy Caviar Pasta Salad
- 1 cup uncooked Ditalini pasta
- 1 cup corn
- 1 cup black eyed peas
- 1 cup black beans
- 1 cup diced red bell peppers
- 1 cup diced green bell peppers
- 1 cup diced seed tomatoes
- 1 cup diced red onion
- ¼ cup chopped fresh parsley
- 2 chopped garlic cloves
- ½ tsp salt
- ½ tsp black pepper
- 8 oz. cilantro lime dressing from Primal Kitchen Foods
Directions:
First start boiling water for your pasta. I prefer using Ditalini for this recipe mainly due to size as it mixes effortlessly into the food and doesn’t take away from the rest of the ingredients. This is just an addition to Cowboy Caviar, but of course, feel free to add your own preference or style to this!
Then, in a separate large bowl, add your corn, black eyed peas, black beans, as well as your diced red peppers, green peppers, seed tomatoes, and red onions.
Side note! If you’re like me, I love to start out by keeping each ingredient separate as I place them into my bowl, for the aesthetic of course. There’s no better way to enjoy cooking when you also feel like you’re creating art. This is also the part where I like to snap a quick photo to make everyone watching my stories hungry.
Once you’ve got that all ready, add in your chopped fresh parsley, garlic cloves, salt, black pepper! I can already smell just so much flavor writing this, I could drool.
When your pasta is finally cooked, go ahead and add that as well.
Finally, the moment we have all been waiting for and our last step before delving into this heavenly creation.
Drizzle in your cilantro lime dressing (I personally like to use the brand Primal Kitchen Food) and mix everything together! This is the most pleasing part about it in my opinion, just seeing all of the colors joining beautifully together and ready to be served.
